Processing
Mel’s Custom Meat Processing
USDA Inspected
Our Diamond F Brand 100% Grass-fed beef is processed
at Mel’s Custom Meat Processing in Romeo, Colorado, about 35
minutes from our ranch. We’re thankful that Mel’s has
obtained the USDA inspection certification necessary for us to be
able to direct market our premium beef to you the customer.
Calm and humane handling
On the day that our animals go to the processor, they are handled
calmly and humanely from the time they are brought in from the pasture
to the moment they are stunned.
Dry Aging
The carcasses are hung and dry aged for at least 14 days and up
to 21 days at 35 to 40 degrees F.
Shrink Wrapped, Vacuum-sealed packs
Our USDA inspected beef comes in vacuum-sealed packages with either
one or two steaks per package, one roast per package, and tubes
of hamburger
Size of cuts
New York Strip and Boneless Rib-eye steaks are cut 1.25” thick,
and are sealed in packs of one or two steaks. T-Bone steaks, bone-in
Rib-steaks, sirloins steaks, sirloin tip steaks, and top round steaks
are all cut 1” thick. Steaks are packed either one or two
steaks to a pack.
Roasts are generally between 3 and 5 pounds. Hamburger comes in
tubes of approximately 1.8 pounds.
Processing of bulk beef purchases
Mel’s also does processing for customers who purchase a whole,
half, or quarter of beef as a live animal, and don’t feel
the need for USDA inspection. Mel’s charges $0.50/pound for
non-USDA inspected processing, and you will receive your beef in
white wrapped, packages stamped; “not for sale”. For
USDA inspected processing, Mel’s charges $0.55/pound for
white wrapped, and $0.65/pound for vacuum-sealed packages.
